Cheese Croquettes

  • 6 dl milk
  • 75 g butter
  • 150 g flour
  • 4 large eggs
  • 1 dl cream
  • 300 g breadcrumbs
  • 10 g gelatin
  • 1/2 d peanut oil
  • 225 g strong Brugge Old Cheese
  • Pepper, salt, nutmeg and lemon juice

 

Make a roux with 100 g flour and 75 g butter

Add the milk to the roux and leave to simmer for 15 minutes; add the Brugge Old cheese and leave to stand.

Turn off heat; mix the gelatin, egg yolks and the cream; add this mixture to the cheese, season and add some lemon juice.

Grease a baking sheet and lay out baking paper: spread out the cheese mixture on this and cover with baking paper and leave to cool for 24 hours.

Whip egg whites with pepper and salt and a few drops of oil.

Lay the cheese mixture onto a surface covered in flour and cut out the croquettes.

Roll the croquettes in the flour, egg whites and breadcrumbs.

Fry at 185°C and warm through in the oven at 200°C.
